Do You Know the Muffin Man
This is one of Justin’s favourite song lately. We listen to the song almost everyday, and it’s one of the song in his Kindermusik class. Isabelle likes it too, and enjoys “dancing” to it. Since we are back to Penang, and we couldn’t go out this afternoon, I decided to let them bake some muffins.
I told my mum our of a sudden, and she didn’t have the correct flour for it. But never mind, we were doing it just for fun, so let it be. Even if it tasted bad, at least the kids got a chance of experiencing the baking process. So here’s what we did….

Sweet Raisin Muffin

The Ingredients
The recipe is very simple. You just have to prepare:
2 eggs
100g sugar
120g flour
4g baking powder
60ml salad oil
55g butter
80g raisins
sufficient vanilla essense
Method:
1. Beat eggs and sugar until thick and fluffy. Add in sifted flour and vanilla essence. Mix well. Add in melted butter and salad oil. Beat until bleaded. Add in raisin and stir well.
2. Spoon the muffin mixture into a piping bag (we didn’t have this) and pipe into small piping cases. Arrange on a baking tray. Bake in an oven preheated to 180 deg C / 350 deg F for 20 ~ 25 minutes. Cool on wire rack.
Ok, back to the process of preparing. We modified the recipe. I did the mixing part while my kids were watching. But Isabelle was afraid of the sound the mixer, so she was being carried by my dad, standing further away.


They enjoyed pouring and mixing the raisins into the mixture. Then, Justin helped to scoop the mixture out and place it into the cups. No doubt, it was really messy!!!


Before baking in the oven, my mum did some touching up and while Isabelle looked on excitedly. She couldn’t wait to eat them!

Everything had almost done….

20 minutes later, my mum took out the muffins and let them cool down. My kids got their hands on them ASAP!!!

So, how is it?

Do you “see” the muffin man? No woh, got muffins only….
They may not be the best muffins, but my kids like them. LOL! As long as they were having fun, the taste didn’t matter much.

Yes, i gotta go get my oven and mixer back quick. But no place toput worrr…. Actually i enjoy the process more than the final product itself, lol. GOOD JOB!!! iLIKE

I baked brownies yesterday and got RE involved by helping me to “paint” the tray with butter. He loved it. Next will try muffins like you.
